Nice to have a ‘day off’, so to speak.

Outta here in about an hour - it’s now 7:30am.  Funny you should say ’slow’ Memorial Day Weekend.  Yesterday there was hardly anybody in town.  Sure, Santa Fe-ans… Santa Fe-ites… Santa Fe-onians… whatever, go somewhere for the long weekend, but surely others come here.  It’s THE major travel destination for New Mexico.  Nope - dead as heaven on a Saturday night, as Lenny says.

Starting to head back west now.  Up to Aztec (some archaeological ruins apparently), then Shiprock, then Four Corners.  Wanna try and be back in Vegas area no later than next Saturday so I can spend a couple of days doing the Rachel-Tonopah loop.  Should be doable.

This’ll make you laugh… clicking around the channels after the games last night I came across E Channel.  They were having a special half hour on really cool things to do for Memorial Day.  Number One…?  Girls Gone Wild on the Vomit Comet!  They actually showed footage of a bunch of topless chicks doing the Zero-G!  Too funny.

Alright - here’s a new dish to add to your kitchen quiver… or, something.

Breakie yesterday at Cafe Pasqual’s - world famous Santa Fe-style eatery on the lower backside of the Plaza.  By the way, ‘lower backside’ is not my description.  I stopped two young women (I’ve been known to do that for any number of reasons) who looked like they might be from the area and asked them if they were going to go someplace special for breakfast, where would they go.

One of them — Betty (who names their kid Betty?!) — said Cafe Pasqual, and the other — Abigail (not Abby, Abigail) — said I simply must have the Huevos Motulenos.  Don’t ask, just order it.  They were both in agreement on this point.

Why ‘lower backside’, I asked.  Because it’s the opposite of ‘upper topside’, Betty said.  Abigail nodded with a slightly quizical expression that had “DUH!” written all over it.  There were soooo many lines I could have used.  But I was hungry and it was Memorial Day weekend.

Anyway, I digress…

Here’s the recipe - it is (should be) self-explanatory.  Yummy does not begin to do it justice.

Two eggs over easy on corn tortillas with black beans topped with sauteed bananas, feta cheese, green peas, salsa fresca and served with tomatillo salsa.

Eggs, bananas, feta cheese, tomatillo salsa… love these people!
